Stunning Hestercombe Gardens Restaurant Revitalized with Award-Winning Chef

The Stables at Hestercombe Gardens, a beloved restaurant near Taunton, has reopened this month under exciting new management and with the addition of an acclaimed chef. Andrew Swann, recipient of the prestigious Trencherman’s Guide award and former Executive Chef at The Castle in Taunton, has joined as head chef. The restaurant welcomed guests again on Thursday, May 1, signaling a new chapter for the popular venue.

This revival comes after challenging times for Hestercombe Gardens, which saw significant staff reductions earlier this year. Over 50 employees faced reduced hours in January, prompting some to leave. David, 31, who has dedicated more than seven years to Hestercombe, stepped up as co-director of The Stables in March, aiming to steer the restaurant toward a bright future.

Reflecting on the transition, David shared, “It’s been bittersweet—sad to see so many staff go, but we have retained our entire front-of-house team.”

Since David and co-director Courtney, 21, took the helm, several positive changes have been made. Securing Andrew Swann was a major coup, elevating the culinary experience. Additionally, the restaurant’s opening hours have expanded significantly—from just four days a week to seven. Now, guests can enjoy coffee and cakes on Mondays and Tuesdays, with the full menu available Wednesday through Sunday.

The response from visitors has been overwhelmingly positive. David remarked, “We’ve received fantastic reviews. We’ve already hosted two weddings, with another scheduled tomorrow!”

Weddings are a growing feature at The Stables, with David managing around 40 enquiries for upcoming events. Hestercombe Gardens, spanning 50 acres of historic land dating back to medieval times, offers a picturesque and accessible setting just three miles from Taunton’s center, making it a sought-after location for special occasions.

Looking ahead, David hopes to increase the number of weddings hosted at The Stables and plans to introduce a special Christmas menu later this year, adding to the restaurant’s appeal.

The Stables welcomes visitors seven days a week: from 10 am to 4 pm on Monday and Tuesday (subject to weather) and 10 am to 4:30 pm Wednesday through Sunday.

Hestercombe Gardens itself remains open daily from 10 am to 6 pm, with last entry at 4:30 pm. Admission is £16.90 for adults, £8.45 for children, and £42.50 for families, while members and children under four enter free.
