Ingredients

For the traybake:

  • Aubergine
  • Mixed peppers
  • Onion

  • Thai basil
  • Lime leaves
  • Lemongrass

Method

  1. Preheat your oven to 220°C (200°C fan)/Gas Mark 7. Combine all sauce ingredients in a bowl.
