Ingredients:

  • Chicken thighs (or breasts)
  • Flour
  • Paprika
  • Salt and pepper
  • Cooking oil
  • Onion
  • Bell pepper
  • Garlic
  • Tomato purée
  • Canned tomatoes
  • White wine (optional)
  • Chicken stock
  • Double cream
  • Fresh spinach
  • Grated Parmesan cheese

Method:

  1. Season the chicken thighs by tossing them in a mixture of flour, paprika, salt, and pepper until well coated.
  2. Heat oil in a large, deep frying pan over high heat. Fry the chicken for 3-4 minutes on each side until golden and crispy. Remove and set aside.
  3. Reduce heat to medium; add chopped onion and bell pepper to the pan. Cook for 4-5 minutes until softened, adding more oil if necessary.
  4. Stir in minced garlic and fry for 30 seconds.
  5. Add tomato purée, canned tomatoes, white wine (if using), and chicken stock. Bring to the boil, stirring well.
  6. Return the chicken to the pan with any accumulated juices. Cover, reduce heat, and simmer for about 30 minutes until the chicken is tender.
  7. Stir in the cream and fresh spinach, cooking until the spinach wilts. Remove from heat and sprinkle grated Parmesan over the top.
