Mary Berry’s roasted sausage and potato dish is the ultimate weeknight dinner, coming together in just 60 minutes with minimal effort. This comforting meal, perfect for autumn evenings, requires only three simple steps and can serve four to six people, making it an ideal family favourite.
One of the best parts? It’s all cooked in a single roasting tin, which means less washing up and more time to enjoy your meal.
Mary Berry explains, “This will become a firm family favourite as it can be cooked in one dish and is so quick and easy to put together. If you’re cooking for young children, you can substitute the wine for stock. I recommend using your favourite British sausages—my family loves leek and sage.”

To prepare, preheat your oven to 220°C (200°C fan/Gas 7). Place all ingredients except the wine into a large resealable bag. Seal and shake well to coat everything evenly in oil. Alternatively, mix the ingredients thoroughly in a large bowl.
Spread the coated sausages and vegetables evenly in a roasting tin, making sure the sausages remain uncovered. Season with salt and pepper. Roast for 30-35 minutes until golden, then remove the tray, turn the sausages, and toss the vegetables in the cooking juices.
Pour in the wine, return the tray to the oven, and cook for another 20 minutes until the sausages are fully cooked and the potatoes tender.
Serve hot with mustard or your preferred sauce. For a heartier option, accompany the dish with rice, couscous, or pasta. This straightforward recipe proves that delicious, hearty meals don’t have to be complicated.
