  • Six skinned salmon fillets
  • Salt and freshly ground black pepper
  • 150g cream cheese
  • One small crushed garlic clove
  • Grated rind of half a lemon
  • 25g white breadcrumbs
  • 25g coarsely grated parmesan
  • Two tablespoons chopped fresh parsley
  • Paprika

Instructions:

  1. Preheat your oven to 200°C (180°C fan or gas mark 6). Season both sides of the salmon fillets with salt and pepper.
  2. Place the fillets on a greased baking tray or roasting tin.
  3. In a bowl, mix together the cream cheese, garlic, salt, pepper, and lemon rind. Spread this mixture evenly over each salmon fillet.
  4. In a separate bowl, combine the breadcrumbs, parmesan, and chopped parsley. Season as desired, then sprinkle this mixture generously over the cream cheese layer. Finish with a light dusting of paprika.
  5. Bake for 15 minutes. The salmon is perfectly cooked when it changes from translucent to opaque pink.
