Eggs Benedict is a breakfast favorite, celebrated for its rich flavors but often seen as difficult to prepare at home. Luckily, Mary Berry, the beloved former Bake Off judge, has demystified the process by sharing her classic recipe, making it easier and more accessible for home cooks.
Originally featured in her book Classic and later revisited on her website, Mary encourages cooks to try this elegant dish at home. “A classic dish, such a treat to have when eating out, but thought to be tricky at home – it needs care but is well worthwhile, have a go!” she advises, adding that smoked bacon can be used if preferred.
To make the Hollandaise sauce, start by frying bacon for four to five minutes in a dry non-stick pan over high heat or grilling it until crisp. Keep the bacon warm once cooked.

Next, whisk egg yolks and vinegar together in a medium bowl, then place it over gently simmering water. Slowly drizzle in melted butter while whisking continuously until you achieve a thick, glossy sauce. Season with salt and pepper, cover with cling film, and set aside.
For poaching the eggs, bring a pot of water to a boil, then reduce to a gentle simmer and add a splash of vinegar. Crack each egg into a small cup. Create a gentle whirlpool in the water with a spoon and carefully slide the egg into the pan. As Mary reassures, “Don’t panic when first tipping an egg into the poaching water. The egg white will naturally spread out, but it comes together as it cooks, and you can tidy the edges at the end when the cooked egg is draining on kitchen paper.”
Cook the eggs for three to four minutes until the whites are set but the yolks remain soft. Monitor the water temperature, lowering the heat if it starts to bubble. Remove the eggs with a slotted spoon and drain on kitchen paper.
Toast and butter English muffins, then warm some spinach in butter, seasoning to taste. Assemble by placing spinach on each muffin half, topping with a poached egg, a generous dollop of Hollandaise sauce, and finally, two bacon rashers arranged in a cross.
