Ingredients:

  • 1 tablespoon sun-dried tomato oil
  • 1 garlic clove, chopped
  • Sun-dried tomatoes
  • Tinned tomatoes
  • Vegetable or chicken stock
  • Sugar
  • Salt and freshly ground black pepper
  • Milk and cream
  • Pesto (for garnish)

Method:

  1. Heat the sun-dried tomato oil in a large, deep pan over medium heat. Add the chopped garlic and stir-fry for a few seconds until fragrant.
  2. Add the sun-dried and tinned tomatoes, stock, and sugar. Bring the mixture to a boil while stirring constantly. Season with salt and black pepper.
  3. Cover the pan, reduce the heat, and let the soup simmer for 10 minutes.
  4. Remove the pan from heat and blend the soup until smooth using a hand blender.
  5. Stir in the milk and cream, adjust the seasoning with salt and pepper, and gently reheat on the hob.
  6. Serve hot, garnished with a half teaspoon of pesto swirled on top.
