Mary Berry’s Easy Sausage Traybake Recipe: One Dish, Under an Hour

Ideal for feeding four to six people, this roasted sausage and potato traybake requires just one baking tray and takes less than an hour to prepare and cook. It’s designed for busy households seeking a satisfying, well-balanced dinner without the fuss.

To prepare, preheat your oven to 220 °C (200 °C fan/Gas 7). Combine all ingredients—except the wine—in a large sealable freezer bag. Seal and shake well to coat everything evenly with oil. Alternatively, you can toss the ingredients in a large mixing bowl.

Transfer the mixture to a roasting tin, spreading it out in a single layer. Ensure the vegetables are not covering the sausages. Season with salt and pepper, then roast for 30 to 35 minutes until golden brown.

Remove the tray from the oven, turn the sausages, and toss the vegetables in the pan juices. Add the wine or, if preferred for children, substitute with stock. Return the tray to the oven for another 20 minutes until the sausages are fully cooked and the potatoes are tender.

For an extra touch, serve with a dollop of mustard on the side. Mary suggests using your favourite local British sausages, with her family favouring leek and sage varieties. This versatile recipe is perfect for busy weeknights and sure to be a hit with the whole family.
