This recipe requires only a handful of ingredients and combines hearty sausages with roasted potatoes and vegetables, making it a well-balanced and satisfying supper. Designed to serve four to six people, it’s an ideal option for busy weeknights when you need something both speedy and nourishing.

To prepare, start by heating your oven to 220°C (200°C fan)/Gas mark 7. Place all ingredients except for the wine into a large, sealable freezer bag. Seal and shake well to evenly coat everything with seasoning and oil. Alternatively, toss the ingredients in a large mixing bowl.

Spread the coated ingredients out in a single layer on a roasting tin, ensuring the vegetables don’t cover the sausages. Season with salt and pepper, then roast for 30 to 35 minutes until golden and partially cooked.

Remove the dish from the oven, turn the sausages over, and mix the vegetables through the pan juices. Pour in the wine—or substitute with stock if cooking for children or avoiding alcohol. Return the tray to the oven for a further 20 minutes, until the sausages are cooked through and the potatoes are tender and browned.

Serve your sausage traybake hot, optionally accompanied by a dollop of mustard on the side for an extra zing. Mary suggests using local British sausages like leek and sage for the best flavour.
