Ingredients:

  • Chicken pieces
  • Mushrooms
  • Spinach
  • Oil
  • Chilli and garlic
  • Crème fraîche
  • Fresh parsley
  • Cornflour
  • Tinned tomatoes
  • Tomato paste
  • Thyme
  • Salt and pepper
  • Lasagne sheets
  • Grated cheddar cheese

Method:

  1. Preheat your oven to 200°C (180°C fan, Gas mark 6) and prepare a shallow 1.8-litre ovenproof dish.
  2. In a frying pan over high heat, add oil and fry the chicken pieces until golden but not fully cooked.
  3. Add chopped chilli, garlic, and mushrooms, briefly frying them before stirring in the spinach until wilted.
  4. In a small bowl, mix cornflour with two tablespoons of water until smooth.
  5. Stir the crème fraîche and parsley into the chicken mixture, then add the cornflour blend, cooking until the sauce thickens. Set aside.
  6. Prepare the tomato and herb sauce by mixing tinned tomatoes, tomato paste, and thyme in a bowl. Season with salt and pepper.
  7. Soak the lasagne sheets in boiling water until softened.
  8. Layer the dish beginning with a third of the chicken mixture, followed by a third of the tomato sauce, then three lasagne sheets. Repeat the layers once more.
  9. Finish with a final layer of the chicken mixture and tomato sauce, topping with grated cheddar.
  10. Bake for 35 to 40 minutes until golden brown and cooked through.
  11. Serve accompanied by a fresh salad or green vegetables.
