Mary Berry has shared a wonderfully simple recipe for classic Italian beef cannelloni, combining rich flavors and comforting textures, perfect for a satisfying family dinner or delicious leftovers. Featured in her ‘Mary Makes It Easy’ cookbook, this dish comes together with under 30 minutes of prep time, though it requires a couple of hours to simmer and bake for full flavor development.
The process starts by gently simmering a hearty beef filling infused with Worcestershire sauce, tomato purée, and thyme. While the meat simmers, prepare a fresh tomato and basil sauce by frying onions and garlic before letting the mixture slowly cook down into a rich, fragrant base.
To assemble, preheat your oven to 200°C (180°C fan). Spread a layer of the tomato sauce in an ovenproof dish, fill each cannelloni tube with the beef mixture, and arrange them neatly on top. Cover with the remaining sauce, sprinkle mozzarella and Parmesan cheese over the top, and bake for 35 to 40 minutes until bubbling and golden.
