Mary Berry’s Chocolate Traybake Cake: Delicious, Easy, and Perfect for Sharing

This delightful traybake features a moist chocolate base topped with a silky milk chocolate icing, beautifully decorated with a feathered design made from white chocolate. It’s a perfect treat to share at birthday parties or any special occasion, and you can customize it with your choice of sweets, chocolate bars, or marshmallows to add a personal touch.

Here’s what you’ll need:

  • 50g cocoa powder
  • 6 tablespoons boiling water
  • 100g baking spread
  • 275g caster sugar
  • 3 large eggs
  • 125ml milk
  • 175g self-raising flour
  • 1 teaspoon baking powder
  • 3-4 tablespoons warmed apricot jam
  • 100ml double cream
  • 200g chopped milk chocolate
  • Optional: chopped sweets, white chocolate, marshmallows

And here’s how to make it:

  1. Preheat your oven to 180°C (160°C fan). Grease a 30x23cm traybake tin and line it with baking parchment.
  2. Mix the cocoa powder with boiling water until smooth. Beat in the baking spread until silky.
  3. Add the caster sugar, eggs, milk, self-raising flour, and baking powder, then mix everything until well combined.
  4. Pour the batter into the prepared tin and bake for around 30 minutes, or until the cake starts to pull away from the tins’ edges.
  5. Let the cake cool in the tin for 10 minutes, then turn it out and remove the parchment. Brush the top with warmed apricot jam and allow it to cool completely.
  6. For the icing, gently heat the double cream in a saucepan and stir in the chopped milk chocolate until melted and smooth. Let it cool slightly before pouring over the cake, spreading evenly.
  7. To create the feathered decoration, melt 100g white chocolate and place it in a piping bag. Pipe parallel lines across the cake about 1cm apart, then drag a cocktail stick through the lines in alternating directions to create the feathered effect.
  8. Finally, add your choice of sweets, chocolate bars, or marshmallows for extra decoration and fun!
