Mary Berry’s 30-Minute Sausage Dinner Swaps Mash for New Potatoes

Bangers and mash have long been a beloved British classic, but sometimes a simple twist can breathe new life into this comfort food. With winter in full swing, Mary Berry offers a speedy and flavorful alternative—a sausage hotpot using new potatoes and red peppers instead of mash, perfect for a warming family dinner.

This hearty one-pan dish is as easy as it is delicious. Start by browning the sausages in hot oil until golden, then set them aside. Next, crisp up some bacon in the same pan. Add chopped onion, red pepper, carrot, and garlic, frying them until softened and fragrant. Pour in stock, tomatoes, and tomato purée, tossing in fresh thyme, and bring everything to a boil.

Gently fold in peeled new potatoes, season generously, then nestle the sausages and bacon back in. Cover and simmer until the vegetables are tender and flavors have melded beautifully. Remove the lid and cook a little longer to thicken the sauce slightly.
