Mary Berry’s 15-Minute Sausage Rolls That Rival High Street Bakeries

As the seasons change, Mary Berry’s 15-minute sausage rolls continue to be a comforting favorite, perfect for picnics, snacks, or a quick meal. Whether you’re dashing out the door or looking for a warm treat at home, these sausage rolls are a reliable and delicious option that come together with ease.

Over the years, I’ve tried many Mary Berry recipes, but none compares to the frequency with which I make these sausage rolls. According to reports by the Express, they’re a reliable crowd-pleaser. Good Food praises them as “the first to go at any party”—easy to prepare and absolutely irresistible.

While Mary offers a vegetarian alternative, I always opt for the classic pork version, which is wonderfully rich and satisfying.

Here’s what you need to make them:

  • 225g pork sausage meat
  • 50g mature cheddar, grated
  • 2 teaspoons chopped thyme leaves
  • 1 packet ready-rolled all-butter puff pastry
  • 1 free-range egg, beaten

Method:

  1. In a bowl, combine the pork sausage meat, grated cheddar, and chopped thyme. Season generously with salt and pepper, and mix thoroughly with a fork. For an extra flavor boost, I add about a teaspoon of paprika—it gives the sausage rolls a lovely depth and warmth.

  2. Lightly flour your work surface and roll out the puff pastry into a rectangle roughly 25cm by 48cm.

  3. Brush the surface lightly with the beaten egg, then cut the pastry into six strips around 8cm by 25cm.

  4. Divide the sausage mixture into six equal portions, shaping each into a long sausage. Place one along the edge of each pastry strip, leaving about a 1cm border.

  5. Brush both long edges of the pastry with beaten egg, fold the pastry over the filling lengthwise, and press the edges to seal. Trim any uneven edges and crimp with a fork to secure.

  6. Preheat your oven to 200°C (180°C Fan). Chill the prepared sausage rolls in the fridge for at least 10 minutes.

  7. Once chilled, slice each roll diagonally into five or six bite-sized pieces, arrange them on a baking tray, and brush generously with beaten egg.

  8. Bake for 12 to 15 minutes, or until the sausage rolls turn golden brown and are cooked through.

Fresh from the oven, these sausage rolls are simply scrumptious. They also reheat beautifully, making them a perfect make-ahead snack or meal for busy days. Each bite delivers a comforting, flaky, and savory experience that’s sure to impress.
