Ingredients

  • 1 tablespoon oil from sun-dried tomatoes
  • 2 cloves garlic, finely chopped
  • 100g sun-dried tomatoes
  • 1 litre vegetable or chicken stock
  • 2 tins of chopped tomatoes
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • 75ml milk
  • 75ml cream
  • Pesto, to serve (optional)

Method

  1. Heat a large deep pan over medium heat and add the oil from the sun-dried tomatoes.
  2. Add the garlic and stir-fry briefly until just starting to colour.
  3. Stir in the sun-dried tomatoes, stock, tinned tomatoes, and sugar. Bring the mixture to a boil, stirring constantly.
  4. The sugar balances the acidity of the tomatoes and enhances the overall flavour.
  5. Season with salt and pepper, cover with a lid, reduce heat, and let simmer for 10 minutes.
  6. Remove the pan from heat and blend the soup directly in the pan with a hand blender until smooth.
  7. Stir in milk and cream, adjust seasoning, and heat gently on the hob.
  8. Serve hot with a swirl of pesto on top for added flavor — though it’s delicious even without it.

This tomato soup combines ease with rich, comforting taste, making it a perfect quick meal for cold days or whenever you want a no-fuss dish.
