Deciding what to cook for dinner can often feel like a daunting task, especially when “quick and easy” recipes end up demanding endless ingredients and complicated steps. Ingredients needed
Katherine only needed to buy baby new potatoes and chicken legs; the rest of the glaze ingredients — grainy mustard, tomato ketchup, Worcestershire sauce, honey, garlic — were already stocked in her kitchen. She opted for chicken drum fillets after her local store ran out of drumsticks, and picked baby potatoes to save on chopping time.
Method
First, Katherine preheated her oven to 200°C and lined a baking tray with greaseproof paper. She combined the glaze ingredients in a small bowl, minced garlic, and folded it in.
Chicken legs were arranged on the tray, with small cuts made in the skin to help the glaze penetrate. The glaze was generously spooned over the chicken to coat it thoroughly.
The potatoes were tossed with olive oil, salt, and pepper before being added to the tray alongside the chicken.
Preparation took just about 10 minutes from start to finish. Katherine then baked the tray for 40 minutes.
After baking, she drizzled remaining glaze over the potatoes and returned the tray to the oven for another five minutes to achieve extra crunch.
Paired with steamed broccoli and carrots she had on hand, the meal was not only simple but delicious.
