Nestled atop the Mendips within the serene Mad Swans hilltop resort, The Potting Shed offers more than just a meal—it’s an experience steeped in what they proudly call “unreasonable hospitality.” This concept, inspired by author Will Guidara, means delivering beyond expectations in every way.

Arriving at The Potting Shed, I was immediately struck by the calming ambiance. From my window seat, the lavender garden painted the right side with serene purple hues, while golfers casually aimed their putts on the left. This peaceful setting set the tone for a dining experience designed to slow life down and savor every bite.

The staff embody this philosophy wholeheartedly. My waitress was an embodiment of positivity, attentive without being intrusive, eager to share knowledge about the ingredients, or to consult the kitchen for details when needed. The dedication mirrored the graceful swans that lend the resort its name—effortlessly blending warmth and professionalism.

Although it was early afternoon, I was intrigued by their ‘conscious cocktails,’ alcohol-free creations crafted with Smiling Wolf vitamins and nootropics, designed by renowned mixologist Oskar Kinberg. I chose the Freshly Cut Grass (£8), a vibrant and tart blend of gooseberries, French parsley, and soda—refreshing, without any grassy undertones.

The starters set high expectations: the grilled potato and rosemary focaccia (£6) was a new take on a classic, hearty and aromatic, perfect for sharing. Then came the sweet burrata with honey-roasted figs and basil (£11). The pairing was sublime—the figs bathed in honey unlocking a newfound depth to this beloved fruit, beautifully accented by delicate edible flowers that added visual flair and subtle flavor.

The true star of the menu, however, was the “Eat the Rainbow” main course—a colorful medley of grilled vegetables artistically arranged to represent the spectrum of a rainbow. Priced at £11, with options to add grilled chicken, king prawns, or fried seabream, this dish redefines how vegetables can take center stage. It’s a vibrant reminder that healthy eating can be both exciting and satisfying.

From the culinary offerings to the stunning views and the attentive service, The Potting Shed truly embodies unreasonable hospitality.
